Curried Chicken Salad

A throw-it-together on a weeknight dish that is also packed with a retro Waldorf salad via India flair!


Texture is key! The crunchy diced apple and celery contrast nicely with the tender chicken and creamy yogurt binding it all together.


The addition of curry powder gives this chicken salad a warmth and subtle kick that makes your tastebuds perk up. Up-level with other classic Indian spices such as ginger, coriander and cumin for aromatic warmth, or cool it down by upping the yogurt, apple and celery, and citrus elements.


For a nutritional boost, up the greens (kale, scallions and fresh parsley pair well) - or try stirring in some sliced almonds, pistachios, cashews, dried cranberries or raisins.


Pair this chicken salad with some cooked lentils and rice for a complete curried-inspired lunch or dinner.


Made ahead, this chicken salad keeps well in the fridge, making it a great make-ahead option for easy lunches or picnics during the week. Serve curried chicken salad between slices of naan or pita bread for an Indian-inspired chicken salad sandwich twist. Or stuff into avocado halves or hollowed-out tomatoes for a fresh, filling snack.
