Tofu Stir Fry

Updated: Nov 17, 2023

This asian-inspired dish features crunchy broccoli florets and soft cubes of sautéed tofu, but is endlessly adaptable - try swapping or adding veggies like snap peas, bell peppers, carrots, cabbage, etc. to change it up.

Minimal prep and the stir-frying technique makes for a quick and easy weeknight dinner option. It also preserves nutrients because of the quick cooking time.

  • This dish is a great way to sneak more vegetables into your diet! The broccoli adds fiber, vitamins C and K, and antioxidants.

  • Tofu is an excellent plant-based protein that is low in fat and high in calcium and iron. It takes on the flavors of the dish beautifully.

  • By adding ginger, garlic, soy sauce, and other Asian-inspired seasonings, you can give this simple stir fry a tasty flavor boost.

  • The combination of the crisp broccoli and the soft, creamy tofu makes for fun, contrasting textures in each bite.

  • Serve over brown rice, quinoa, or sub in your favorite low carb base if you're on a flex day.
